Pineapple Chicken Mango Cups
Pineapple-Chicken-Mango-Cups is a great meal the entire family will enjoy with it’s great flavors and colors! Follow these quick and easy steps and enjoy these cute and delicious cups.
These delicious Pineapple Chicken Mango Cups is great when you have friends over, you can enjoy it indoors or outdoors.
1 cup cooked basmati rice
1/2 red onion chopped
1/2 red bell pepper chopped
1 lb. ground chicken
1/2 cup pineapple bits
1/2 cup pineapple juice
1 teaspoon fresh 100% lemon juice
3 tablespoons honey
1/4 cup chopped fresh cilantro leaves
A handful of Butter lettuce leaves
HOW TO MAKE:
Cook ground chicken, red onion, and red bell pepper in pineapple juice in a large skillet over medium-high heat until chicken is cooked through and pineapple juice almost dried up.
Stir in 1 teaspoon fresh 100% lemon juice, 3 tablespoons honey, pineapple bits and cook until fragrant for about 2-3 more minutes. Fold in cilantro. Serve rice and chicken mixture in butter lettuce leaves.
